Dan & The Pistachio Fudge 🎁🎁🎁

So today, whilst high on my new combo of psych meds (that will be a blog for another day. Probably Friday, so stay tuned.) I got into a banking kind of spirit! I put on some Christmas music  (ahm, the Home Alone complete soundtrack) and went mental in my kitchen with making Pistachio fudge. I used the recipe from BBC.co.uk (it's linked below.) but reduced the size cause I didn't buy enough chocolate! XD I used the Lindt 90% dark cocoa because I find it's really smooth and works amazing. You don't have to use 90% but anything under 70% dark chocolate tends not to taste as good; also the original recipe says use anything over 70% so...




I broke my chocolate into chunks with my hands rather than chop it. I broke it over the pan and dropped it right in.


 

Next, I dropped in the butter.  After dropping in the butter, I mixed it around for 2 minutes over low heat before pouring in the sweetened condensed milk.  I continued to stir on low heat for 4-5 minutes with a rubber scraper before I felt it was completely blended and the chocolate was completely melted.  I find it's a bit more of an even melt if I do that with my cooktop. And as I used the salted pistachios, I didn't add any extra salt to the recipe. If you use the unsalted ones, you will need to add that pinch of salt. Also, make sure you shell the goddamn pistachios. Don't put the ones with the shells in the recipe! 



Fold the nuts into your chocolate mixture with your rubber scraper. Make sure the nuts are completely covered with the chocolate mixture before giving it a few good stirs and taking it off the heat. 



Before pouring you unset fudge into your pan, line it with some aluminium foil fist. It makes cutting the fudge out later much easier. Pour in the mixture and smooth it over with your spatula or a wet silver knife. Allow it to cool before placing it in the fridge to chill. 



And le big finish! I cut the fudge into 9 squares and shared with Peaches and brought some to my nan in the rehab centre. Everyone loved the balance of the light sweetness and the light saltiness! :D 

Just dipping my Gingerbread Man's head in the unset fudge...I couldn't wait to see if it was perfect! xD
