DICKCEMBER: Boozmass Trees & Saturated Stockings


Christmas & the entire holiday season is enough to turn anyone into a raging alcoholic and I'm no exception. Normally I'm not a man with a sweet tooth, but today I was in the mood for a few sweets and that sweet relief a cocktail can bring. I figured what the fuck and decided to make some of my Schnapps brownies, but then I remembered that I'd gotten a bottle of Bailey's chocolate cherry Irish cream, I decided to whip up a batch of some Baileys Chocolate Cherry brownies as well. 

WHAT YOU DO
2 boxes of brownie mix
(you can use whatever style or brand you want)
Prepare your mixtures as normal.
Add 1-2 tablespoons of peppermint schnapps, depending on how you like your mint. It will be a light mint taste when they come out of the oven. For the second batch, add in your water and 3-4 tablespoons of the chocolate cherry cream. This has a light flavour so you may need to add a little bit more depending on your tastes. Sometimes I add in mini chocolate chips just for a little something extra. 

Pour each batch of batter into a well-greased baking pan. I wish Pork Chop could do more than just sit there and look pretty. It's a bit of a pain in the balls to sit and mix all these batches. I used an 8x8 set of pans here, though 9x9 or 13 x 9 work a lot better. Goddamnit, I miss the set that I'd gotten myself when I was living in LA. I turned that studio flat into a mini bakery of sorts. Anyway, I don't have time for memory lane. 


While these are baking up you can do what I'd do or you could make up your icing. I've got some Bailey's I want to suck out of Chubb's navel, so I'll be back when I get the chance...

Where did I leave you guys? Ah right, icing.
You're going to make a standard buttercream icing.
Honestly, I'm getting tired of typing out how to make a goddamn buttercream icing every fucking time I use one. We're going to make two batches of icing, one with the schnapps, one with the chocolate cherry. The mint will be green the chocolate cherry will be red. I'm trying to stay a little bit festive, even if I just want to eat them when I'm fucked up. You really can't get fucked up off these things. Trust me, I've tried.
140g/5oz butter softened
280g/10oz icing sugar
1-2 tbsp milk
**Add in 1-2 tbsp of each alcohol and as many drops of food colouring, you require to create your desired colour. 


Make sure your brownies are completely cool before you attempt to ice them. Its the same with a cake. Before you begin icing, we're going to cut out some fun holiday shapes. Use whatever ones you want, but I'm going with the stocking, Christmas tree and gingerbread man. Keeping the brownies in the baking tin or if you want to, remove them, carefully press a greased biscuit cutter into them. Gentilly remove the cutout and set to the side. 


Using a silver knife, collect a small amount of icing and smooth it over the surface of the cutout. Decorate some with holiday sprinkles. Allow icing to set before putting in a container or stacking them together. Each icing will correspond with each brownie. Don't mix them up. I shouldn't have to say these things but judging by all the stupidity floating around lately, I'm going to say it here.
