Delectables with Dan Presents: Shrove Tuesday Vegan Keto Pancakes
It's that time again. Shrove Tuesday aka Pancake Tuesday! I don't remember if I did a blog for it last year, but this year I decided to whip up some delicious and healthy vegan pancakes! I wanted something lower in carbs so I wouldn't feel so weighed down. They're just sweet enough and I like to pair them with a light syrup and some fresh fruit.
1 cup rolled oats, I used the extra thick kind
1 tsp baking powder
1-2 tsp of stevia (or any sweetener of choice)
1/4-1/2 cashew milk
1 tsp vanilla essence
1 small single serving unsweetened applesauce pod (it's about 1/2 a cup)
1/4 cup hemp protein+fibre
1 tablespoon apple cider vinegar
1/4 cup mini chocolate chips of your choice (I love the Enjoy Life brand)
You will need a blender or a food processor in order to make this recipe.
In a high-speed blender or food processor add all of the ingredients except the chocolate chips. You will need to ensure that everything is well blended on high; sometimes you may get chunks of unblended in the bottom of the blender. Allow the batter to sit for 10 minutes. The batter will be thick, but you want it to still be pourable. If it is too thick, add a tablespoon of cashew milk and reblend. Allow sitting for 5 minutes after. Add your chocolate chips of choice and give a good mix with a cooking spoon.
Spray a decent sized frying pan with non-stick baking spray an allow the pan to heat up under medium heat. Spoon out tablespoons of batter 3-4 per pancake. Allow them to cook until they begin to bubble; they should become golden brown in colour, that will show that they're done. Flip and allow the second side to cook. Continue until you've used up the rest of the batter.
Here comes the fun part! While still warm apply a thin layer of butter of choice, I love the coconut butter, it's got a hint of sweet and it's creamy. Drizzle syrup between each pancake and top with fresh berries. I wanted to use strawberries, but I was out of them and raspberries work just as well. This is enough for two people, or in Chubb's case one large serving. I really enjoyed making these; it was my first time having a go at something like this and I couldn't be happier with the result. I'm gonna explore other vegan pancake options and make them here on the blog! Maybe I'll incorporate them into dessert recipes. Who knows? I'm always looking for a challenge.
