Delectables with Dan: Cupcake Sundaes (Mint Chocolate Chip)

Autumn is here!
Yes, don't try and fight it. It's already cool, overcast and rainy here and that's autumn. End of debate. So, on this wonderful weathered Sunday, Pork Chop and I decided to kick off the Cupcake Month, where the main focus of Delectables with Dan will be cupcakes, with a Cupcake Sundae kit I got from a friend last month. We're going to be doing the Sundae Chocolate Chip one and don't worry links, where you can buy your own, will be linked below.

So, the kit costs $9.95 and it makes 8 cupcakes. You have to add in your own butter and egg, obviously, which makes the price seem a little over zealous if you ask me. Once you add in the cost of buying eggs and butter, the cost of it is over $15.00, not to mention in the electricity it will take to run the oven. But, this is baking, not economics, so let's get back to the cupcakes.

Upon opening the bag, it's not just a regular chocolate cake mix, there's mint inside! Okay, not going to lie, I'm liking that bit. Alright, let's add in our water, egg and butter. I've never really used butter in a box mix cake before, but who am I to argue with authority? Once I've put everything into a mixing bowl, with an electric mixer I'm going to combine everything. You want them to make some love. Oh for the love of the Queen's hats, the smell that kicks up is like a minty heaven. The batter is kind of thick for a cupcake, but I've done all that they asked. I even used a cup measuring set that I bought off Amazon. It just makes it so much easier than trying to convert the American recipes I do to metric, though I enjoy metric more because it's more precise.  Batter has a nice velvety and smooth appearance, just like the delicious back dimples of Chubbs. Oh yeah....just as sweet, but even more satisfying.

You're going to pre-heat the oven to 190C if you're into that. I've not been preheating lately, mainly because it's been summertime and it just adds heat to the house and it's too damn hot out already. It's bad enough when you open the oven to check on something or to take something out and a heat wave hits you and you're stood there in your kitchen feeling like a woman in her 60's having a hot flash.

Pour your cake mix into a large mixing bowl. It's a bit less mix than I expected. Cheated again. Add in the butter, water and egg and mix with electric mixer. I'm not exactly flush with magic making this one. Maybe because it's not something of my own? Or because I'm still too busy being an anal retentive over the money thing. I've gotta send some cash to the person who bought me these, they spent way too much money on me. Not that I'm feeling guilty, I just like things to be balanced. Guess that's my Libra nature or a bit of OCD, I'm not sure which.

The mixture will be thicker than what most people are used to. Spoon evenly into your cupcake pan and put into bake for 20 minutes or until cakes are baked. Edges may crisp up when finished. Do note that when they came out they were more brownie like than cupcake like. It was quite the surprise when I popped them out and found that. It was kind of like those Wonderballs. Someone sent me one of those in like, April, or something. It had dinosaur candies inside and little dino stickers and it I'm not gonna lie to you guys, I screamed. Screamed like a little girl in piggie tails with joy over the dinosaurs. The little 8-year-old inside me was satisfied. Ah, right, the 8-year-old me. I don't have a child inside of me, that would be weird and creepy.

Right, so now that you've satisfied your sweet tooth like I have, it's time to make the icing. Don't worry, if you're like me, you still have plenty of time to make the icing while the cupcakes are still in the oven. ((And no, I'm not quick, I'm just really enthusiastic.))

Gonna be honest here, that looks like Shrek piss. Or some other kind of ogre bodily fluid that I don't even want to think about. It smells sweet, like a fake sweet to me. I'm just an animal when it comes to sniffing out things...among other things.

Add half the butter and half the confectioner's sugar and cream together first. That's another thing that pissed me off. They didn't mention that you'd need that too on the outside of the package. So that's more money you're gonna have to spend for this butter and the sugar. Jesus wept. These things are like Trojan horses, honestly. Once you've loosely creamed together the first half, add the second part of the sugar and butter and blend with an electric mixer until smooth and fluffy. Ah, I could make a Chubbs reference here, but I'm all out of decent ones. Sorry. You'll have to wait for one later.

I tasted the icing and just sat there for a moment, trying to figure out what I'd just put in my mouth. Now, I have put some strange shit in my mouth over my almost 26 years on this planet, and this has to be on the top 20 list. It had a hint of mint, but something else. Then it hit me. Green. It tasted like green. Yes, I shit you not, the colour green. I don't think I can say, while sober, that I've ever tasted a colour before. It was completely perplexing.

It comes with its own little icing bag and nozzle, but I was like 'fuck that in the a' and decided to go with my trusty icing tool that I've used the last four times I've done cupcakes. I need to get a bigger one of those, you know me, I always say that size matters. Icing will be kind of thick as you ice. Once done top with the candy bit that's supposed to be a cherry. I don't know what the fuck the candy is. It's unlike anything that I've ever seen before. I gave the leftover ones to Peaches cause she's a kid and kids like candy. Well, she's 19, but close enough. Sprinkle with the mini chocolate chips that come in the kit and you're done!

So, if you want to give these a try or some of the other baking projects you can find them at the links below. I don't know if I will do another one of these, I mean I have another one of these, an almond chocolate sundae one, but I think I might just have Peaches do that with her friends. They'll have fun and it won't go to waste. It's inspired me to come up with a REAL sundae cupcake that I'll feature on here sometimes. Maybe I'll just save this one for the Delectables cookbook or the bakery.

All in all I give this a 7/10.
If you have made this or one of the other kits, let me know how it came out! I'd love to hear about your results. Maybe I just wasn't enthusiastic enough or something? Either comment or message about them and I will see you next time with RAINBOW CHIP COOKIES!!
