Delectables with Dan: Taste My Frothy Mint 😏☘️ (St Patrick's Day Special)


Greetings & Salutations fellow Shamrocks! 
Today on Delectables with Dan, I rock out  magic filled 
St Patrick's Day mint iced cupcakes! And don't worry, we will be using Bailey's 
soon enough. It wouldn't be St Patrick's Day without any liquor, am I right? 
(Yeah, I had to go with the mint aesthetic for the banner, because well a. I do
whatever I want. b. I'm obsessed with mint green and c. There's mint in the bloody icing.)

Prepare your cake mix just as the box instructs you to, but if you want, like I did, add a shot of Bailey's. It doesn't do much honestly, but it's nice added touch. And while you're at, have some yourself. While you're drinking and baking, make sure that you pre-heat your oven to 190C/ 375F. You're going to want the oven nice and hot when you put the batter into bake. 


Hand mixing just won't give you the smoothness that you want for the cupcakes. You want the cake batter to be as smooth as a stripper's fanny after a fresh wax. It will help the cupcakes to bake more evenly and avoid unmixed, well I just call it dirt clots cause that's what they look like to me, to get in the way of the baking. Kinda puts a damper on things when you bite into a cupcake and all that powder explodes in your mouth. You want something scrumptious to explode in your mouth. 😏  That will happen later, I promise. (With the cupcakes, not with me.) 


Dice up some mint candies into even bits and piece to add to the cake mixture. Fold into the cake mixture then evenly distribute through the mix. It's kind of like when you're in a strip club; you want to make sure you explore every nook and cranny. You're going to want to get a ladle to spoon (no pun intended here) the batter into the oven. You can use liners for your cupcakes like I did, or you can grease your cupcake/muffin pan. Give it a nice lube job, you don't want them getting stuck. No one wants to get stuck. Actually, that happened to a mate of mine, Tom, but that's a story for another blog at another time.


Make sure that the batter is even, or close enough as you can get. I did a good job on the first round of cupcakes but got a little sloppy on the third tray of cupcakes. Honestly, by that time I didn't give a shit. I just wanted to be done with it so I could go and play some Playstation. And no, that's not why the blog is late; it's late because I was doing some editorial work and THEN I played some Crashbandicoot and forgot that I hadn't finished this. 


While the cupcakes are baking up, you're going to use the time to prepare the topping. We're going to go with a mint, whipped cream topping over the chocolate fudge. Think of it kind of as a mint-Sunday. For cupcakes, you're going to need to double your recipe of whipping cream. (I've linked one down below in case you don't know how to do it.) Into your whipped cream add 4 teaspoons of mint extract and 6 of green food colouring and 4 of yellow food colouring. You can just use the green colouring if you want to make your green colour. Totally up to you. I like to switch it up from time to time. 


Once your cupcakes are out and cool (wait an hour) you're going to drizzle hot fudge over the top of the cupcake and smooth out the heated fudge with the back of a spoon. Make sure that you coat the entire top of the cupcake. Allow to sit for about 10 minutes before piping the mint whipped cream on top of the fudge-iced cupcake. Top with a part of the left over mint candies from earlier. Make it sexy and eye catching. Plate and serve. If waiting to serve, then keep in fridge before serving. You don't want the cream to go all yucky on you. It would be like getting a lady home only to find out you're out of Viagra.
I'm not sure why I kept going with the stripper metaphors in this one. I promise the next one will be more story and less stripper and perverse. This dessert is the perfect balance of chocolate and mint which would be a great edition to any St Patrick's Day celebration! I'm even thinking of doing it as a cake for my sister's 19th this May. Who knows!
