Delectables with Dan: Count Cocoa Fang Cupcakes


 

Happy Halloween all you spooktastic bastards! And don't start with Halloween isn't for another few weeks. Halloween starts on the first of October and runs until the 1st of November. End of discussion.  Today on Delectables with Dan Pork Chop and I are going to be making Count Chocula inspired cupcakes!I used a boxed cake mix for this one but you can also make a cake from scratch using the basic salted chocolate cake recipe that I used in the peanut butter cake blog. I'll link that down below. So aside from the cake mix and what you'll need to make one of those, you're going to need 55g 1 1/2 c. of whole Count Chocula cereal. Separate the cereal from the marshmallows; don't put them into the batter, just the cereal bits. You'll need 15g or a 1/2c of marshmallows separated from the cereal.
 


Combine your oil, egg and water with your cake mix in a large mixing bowl. Yep, ol' silver is back. I really should get some other bowls. I feature this one in like every single baking blog. Well, Christmas is coming. Mix on a high speed with an electric mixer for about a minute and a half, scraping the sides as you go. You want the batter to have a nice velvety smoothness to it and ensure that there are no powder bubbles in the mixture; that won't bode well when it comes to adding the cereal bits and baking. And let's face it, no one wants to bite into a cupcake and feel like they've just bit into a clot of dirt.

And now we're going to add the cereal bits. For that, don't use an electric mixer. You want the little ghosties to remain intact for the baking. Do note that once they are baked and you bite into a cupcake they will be a little spongey. That's the goal. Aw, look at cute little Pork Chop there checking out the cake batter. (After this photo he fell in and I needed to take time away to give him a bubble bath. He did like the chocolate though. Maybe we'll do chocolate face masks one day. Is that a thing? I don't know anything about beauty, but they have all kinds of fucked up shit and beauty treatments these days, so...

With a plastic spoon, stir in or fold in the whole cereal chunks into the cake batter. Make sure that the batter completely consumes the cereal. The batter will be lumpy, which is to be expected; but that's all good with me, I like all things chunky. Well, not peanut butter. That shit is gross as fuck with those peanut chunks in it. I really hate peanuts oddly enough, but peanut butter is okay. Maybe its cause they don't taste like those god awful nuts. 




In an oven temp of 180C/ 350F, you're going to put your cupcakes in to bake for 20-25 minutes. You can either grease your cupcake tins or use paper liners. I, of course, went through with spooky paper liners. It really wouldn't be Halloween without them. Using a ladle fill each cupcake liner with batter, making sure not have it overflow. As much as I love Chubb's muffin top, this isn't the time or the place to have one. You want the cupcakes to puff up and bake evenly so when it's time to ice them you have an easier surface to work with.

While the cupcakes are baking up, let's make the icing. This icing is butter free! It will fill the centre of the cupcakes and ice all 24 of them. You want the icing to be thick and spreadable like-no, we're not going to go there today. That's for after hours. 

To make them you will need:
500g confectioner's / icing sugar (4c.)
100g of cocoa powder (1c.) NOT BAKING COCOA
85ml double cream (6 tablespoons, approx.)
85ml Bailey's Irish Cream (you can use non-alcoholic if you wish)

In a large mixing bowl, combined a quarter of your icing sugar, half of your cocoa powder and two tablespoons of the liquid. You can use one of each or two of the same, it doesn't matter at this stage. On a low speed, start creaming together the ingredients. After about a minute of mixing on low, add another quarter of icing sugar and two more tablespoons of liquid. Continue to mix on a low speed, scraping down the side of the bowl as you go. If need be, scrape down the sides of the bowl and stir in any loose icing sugar before continuing to mix with the electric mixer. Add in the last two parts of icing sugar, cocoa powder and your liquids. If you need more liquid, depending on your cocoa powder, slowly add it after you've mixed together the ingredients. Mix on low for 2 minutes, scraping as you need. 




Ah, look at those creamy chocolate bands. Nice. If you don't want to wait for your cupcakes to cool before you fill them up with your delicious creamy chocolateness, you can stick them in the fridge for 15 minutes. Once we have our chilly little choccy cakes ready, we're going to insert an icing needle or a thin tipped icing tool into the centre and fill with icing. If a little bit spirts out the top, that's what you're going for. Okay, that sounded really dirty, but I assure you it's not. Curse this beautiful mind of mine.



I think I may have a fixation with the medium-sized star tip, but we're going to use it here. Fill your icing bag or icing tool up and working counterclockwise ice the top of your cupcakes. There will be small bits of cereal poking out in some of the cupcakes, based on how they baked up. No need to worry about any of that. When you're finished icing, gently push in the marshmallow bits from earlier into the centre of the icing. Use about 5-6 marshmallows on top, it gives it a nice balanced, finished look. And there you have it! I forgot to make a chocolate ganache to drizzle over the top but it really doesn't need it. You can do it if you want. 




The cereals I'm featuring in the spooky cupcake lines I bought in Rhode Island and I'm not sure where everyone can get them. I'll have to try and find where you can get them in other places. I've spent some time looking and I still can't find these cereals available online. Don't worry, I'll be doing other spooky cupcakes throughout the month! I kind of went mental at the Walmart in Providence, so I'll have a lot to share! I'll link things whenever I can.

I've also got tonnes of other stuff in the works for Delectables with Dan! The cookbook I'm working on will just be a cupcake cookbook. I'll eventually do another one for breakfasts, lunches&dinners and then, of course, a dessert one. I might even do a holiday-themed one if I can figure that out. It's a lot of work and I have to figure out, make and have people sample all of the ideas for the cookbook so if I'm not doing as many Delectables with Dans that's the reason why! I'm still looking for suggestions for the blog, like things you guys want to see me do, so still, submit requests!

This is going to be a full month for Mental Masturbation.
