Delectables with Dan: PHIL LESTER INSPIRED CUPCAKE
So the other week Porkchop and I got up making a Dan Howell inspired cupcake. It's only fair that I go on and unveil the Phil Lester (AmazingPhil) cupcake this week! Porkchop only watched as lil Phil accompanied me on this baking journey.
This cupcake is a golden cake filled with little edible sweet bits (optional) with a cream centre, iced with a blueberry icing, topped with a Harbio Gummibear!
This time I used a recipe that I found online for the cake, it's not one of my own and honestly, I didn't care for the texture of the cake. It's one that I'm going to have to play around with before I do a final version for the bakery and cookbook, but that's miles down the line. If you don't want to you can use a simple golden cake mix to make the cupcakes.
WHAT YOU WILL NEED:
(This is for the cake only, the cream centre and icing will come later)
395g superfine caster sugar
390g all purpose flour
1 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla essence
170g unsalted butter, room temperature
240ml milk, room temperature
4 large eggs
1 package baking candies
*Making Baking Powder if you can't find it*
Combine half a teaspoon of cream of tartar & a quarter of a teaspoon of bicarb. of
soda. Mix together and this will give you 1 tsp of baking powder.
WHAT YOU NEED TO DO:
Preheat your oven to 180C/ Gas Mark 4/ 350F
In a large bowl, you're going to whisk together sugar, flour, baking powder and salt. Don't just mix with a mixing spoon, you want to make sure the blend together, think Justin Timberlake and Britney Spears in 1999. I'm not talking sexual compatibility here, that's something else we'll get to later, I'm talking how they mix together, compliment and become one.
Next, you're going to want to add in the butter. For this, you're going to use an electric mixer. The mixture will look sandy, as shown below. I'm not talking like Dessert Storm sandy, but really fine playground sand; a little bit of texture.
Cupcakes will have the little cracks in the top like so if you've put in the little sweetie pearls. There should be no cracks if you've not used them. Crack, in this case, is not good.
To Make A Sweet Creamy Filling You Will Need A PornHub Account! No, just kidding, but here's what you're going to need to make THIS cream filling. And you want to make sure that the cupcakes are cold before you stick your needle into them and start pumping away. Oh Jesus, I just had a vision of having sex with Katherine Heigl. Gross. Let me go have a pint or two before we get on with the icing. Give the cupcakes plenty of time to cool as well.
What You Will Need:
113g softened butter (that's 1 stick or 1/2c)
95g vegetable shortening
1 tablespoon vanilla essence
440g confectioner's sugar
In a large mixing bowl, cream together the butter and shortening with an electric mixer until blended. When this is done it's gonna be thicc and creamy just like Chubb's thighs. He tastes like delicious sweet cream these late summer nights, I tell you-Ah, right I'm supposed to be baking not penning the next chapter of my erotic novel. Right, where was I? Oh, right, right. Now that you've made the mixture, taking a large spoon you want to spoon it slowly into your filling tool/pastry bag. Speaking of pastry bags, I was watching Moral Orel last night, the episode where he's God's chef. Jesus Christ, that's one of the funniest cartoons I've seen in ages. He's taught about masturbating and taught not to waste his seed because it's a sin and his father tells him that now that he's old enough he can be God's chef. The kid takes it the wrong way and- you know what? You guys can watch the episode for yourselves. I'll link it down below.
When you've creamed together your butter and shortening, add in the vanilla and a small amount of the confectioner's sugar. Mix well. Continue alternating between adding small amounts of the sugar and mixing the filling. This should take about 10 minutes to complete. The mixture should be light, creamy and fluffy. If mixture appears too thick, add a small amount of melted butter to it. Do not add milk or cream. Do not store in fridge if not really to use right away, leave out.
Once you've gone and filled your cupcakes with your delicious cream, it's time to ice them. I used a slant tip, I don't know exactly what it's called, but I knew it would make the icing come out looking like clouds and that's the aesthetic I was looking for. But before we get to icing the little ditties, we're going to have to make the icing.
WHAT YOU WILL NEED
440g confectioner's sugar
76g softened butter
2 tablespoons milk
2 tablespoons of blueberry extract
4-5 drops of blue food colouring (depending on your colour concentration)
You can also add more colouring if you want a bit of a darker blue.
In a medium bowl, mix together half the conf. sugar and butter with a hand mixer on low speed. Stir in one tablespoon of milk. Mix. Add in the next part of conf. sugar and other tablespoon of milk. Once well blended, you're going to add in your blueberry extract. Read your package carefully as some extracts are more potent than others. It's kind of like when you're at the off license, read your proofage before committing to something. Don't write a check your arse can't cash.
*If the mixture is a little thick, add in a small amount of milk. Another tablespoon should do ya.
Slowly and carefully, like you're with a lady for the first time, take your tool and ice around the top of the cupcake. Give it a nice swirl texture. Once you've gone and iced the lot of them, top them with a gummibear. They can even be the sour ones if you so wish, but I used the regular ones.
And there we go! That's how you make the Phil Lester (Amazing Phil) cupcake!

After this, you're going to add in a separate bowl combine the milk and vanilla. Once you've done this, you're going to pour it into the mixture. It's going to be rather thicc as you start working mixing it in, so if you have to you may have to give in an old fashioned; you know, taking out a wooden spoon and hand mix it a bit so it doesn't gum up the electric one. I don't know why I went with this recipe. I guess because it had a little knight on the thing and it made me think of the Knights Templar and I was watching The DaVinci Code while I was writing down recipes. Now it is time to add the eggy-weggs. And then one at a time mixing evenly with the electric mixer. Repeat until all eggy-weggs have gone into the mix and it's all nice and silky...Silky like the nighty you want your missus or mister in.
My hand slipped and well, as you can see it lead to this disaster. I was on a deadline here and had like two other DWD recipes I needed to work out so I used this photo. Sue me. Here is where you can add your little candy pearls. they're kind of like sweets I guess, you the ones I used in the mermaid fudge bloggo. Mix them in by hand, don't use an electric mixer. You want to put them in their little cupcake cups and fill them about half full or so, like my sister's bra. Put them into bake for 20-25 minutes, depending on your oven.
