Lemme Put Some Easter In Your Basket: Danny's Bouncing Bunny Cake!
It's already time for another Easter special. I'm having a hard time accepting that, but here we are. I think this is my third year doing an Easter special...it honestly feels like so much longer. Anyway, this year I will be doing a bouncing bunny cake!
It's a red velvet and dark chocolate swirl cake iced with both dark chocolate and sweet vanilla icing, with a happy little rabbit iced into the centre of it, I've had this idea in my head for a while now and I'm excited to finally be getting it out there.
I do have my own homemade batter recipes for each cake flavour, but since it's a holiday and a lot of people are short on time, we're going with the boxed versions. This is a vegan version, but you're welcome to make your cakes just as the box instructs with egg. Totally up to you. I'm not here to change anyone's diet or beliefs. It will be a four layer cake, red velvet, chocolate, red velvet and then finally chocolate. I rarely do four-layer cakes but, I dunno I just really like the idea. You don't have to swirl the two batters together if you don't want to, you can do just the standard like I mentioned above.
What You Will Need
1 box red velvet cake mix
1 box dark chocolate cake mix
unsweetened applesauce
water
vegetable oil
1 tub vanilla icing
2 tubs dark chocolate icing
food dyes/colouring in pink, green and lilac
and if you don't have the skills or ability to draw a rabbit on your own, a cute little rabbit outline printed off the internet. You can use that as your guide as your ice the top of your cake! You'll need a few different tips, a single small round tip and the little leaf tip to make the grass.
Let's Bake!
You are going to need two large mixing bowls, one for each cake batter. You'll swirl them at the end when you put them in the cake pans. Originally, I was planning to do another mini cake but I decided that a full-sized cake would be the thing to do. You can do mini cakes if you want, but it will result in two cakes of 4 layers. Prepare the cakes following the instructions on the box, subbing the apple sauce for the egg. Grease the cake tins, you can put in four at a time if you have that many baking tins. If you are doing the swirl cake this it the time to do it. Put the cakes into bake at 350F for 20-25 minutes. Test to ensure your cakes are done before you remove them from the oven.
Once your cakes are completely cool it's time to ice them. Start by centring one of the cakes on a large serving plate or platter. The first icing layer will be a dark chocolate icing. If you are making your own, the time to make it is when your cakes are baking; that goes for the vanilla icing as well. Ice the layer and then add another layer of cake. This layer will be the vanilla layer; you can do what I did and make the vanilla two of the spring colours and swirl them so when you cut the cake open there's a lovely colour pop. The next layer will be chocolate and the top of the cake will be chocolate as well. Ice around the sides of the cake so that the entire cake has a decent layer of chocolate icing. Once you've done that work sprinkles around the outside of the cake on the top; if you have enough rainbow sprinkles, you can add a small amount of them on the bottom of the cake. Now's the time for the pink icing, using the pink icing and a small round tip, carefully write Happy Easter around the top and the bottom of the top of the cake and on the side or the centre, depending on your preference, ice your rabbit.
I ended up not doing the little leaves and flowers because I was tired and I ran out of time. My rabbit suffered as my hands were shaking from a lack of sleep, so it's not up to my usual standards. Thankfully, it's just a eat at home type cake and it's not going to a party or being sold. I hope you all enjoy this amazing Easter cake and your holiday!
