Delectables with Dan: Stuff My...Potato


Delectables with Dan has gotten a makeover! The pre-written Delectables with Dan will feature the older format while I finish them and after I post those this will be the main format for the series. I'm happy to announce that it's really grown into something amazing.

This is a quick little dish that both vegans and non-vegans alike can enjoy this veggie-packed dish on rushed evenings. You can use any potato you like, I'm making mine with red and stuffing them with a gooey vegan cheese mixed with garlic spinach, paired with some oven baked tomatoes, broccoli and cauliflower for a balanced and summer vibe dinner.


I had small red potatoes, but you can use whatever size you have available. If they're small like mine, you might want to make 2 or even 3 depending on how hungry you are. You're going to bake them like you would any baked potato. Poke holes in the top of the potato so they won't explode when they bake. I like to slice them down the middle. Once, they are just about done cooking, you're going to scoop out some of the insides. It only takes a few minutes to prepare the cheese and spinach mixture. You're going to take roughly a handful of spinach, a pinch of garlic salt and a drizzle of olive oil and put it in a non-stick pan under medium heat. Once they start to cook down, you're going to add your vegan mozzarella. You can't let it sit, you're going to have to keep stirring with a cooking spoon otherwise it will stick and burn in the pan. Once the cheese has melted into the spinach, you're going to spoon it into the scooped out potato. Garnish with either cilantro or basil, it's your choice.
You can put the tomatoes in towards the end of the baking of the potatoes, drizzle with olive oil and a pinch of black pepper and basil. Pull out when they soften. Well, that sounds frisky...I didn't intend that, but I'm not gonna change it. I like it too much.



I know this blog is formatted totally different. It's because I was in a rush when I was writing this and was a bit disorganised. The regular ingredient lists will return for the next Delectables with Dan.
