Delectables with Dan: Flatbread Madness
Hey guys! It's time for another all-new Delectables with Dan! I wanted to do something a little familiar but with a new little twist. It's a quick dinner fix when you're in a hurry. I didn't think I'd do a blog on this one, but I figured what the hell, I need a distraction, might as well turn it into one. This one can be ready in about 45 minutes and is really simple to make.
You will need:
favourite store bought dough (1 lb; most of them are vegan, just take a quick peek at the label)
half a fresh, ripe Roma tomato

3-4 fresh, ripe grape tomatoes
5-6 fresh spinach leaves, shredded
1-1/2 tablespoon all-salt (you can use garlic salt if you wish)
2-3 fresh basil leaves, shredded (if not available use dried)
2-3 tablespoons olive oil
Remove the pizza dough or bread dough from the fridge; do not allow it to rise. Stretch it out or roll it out over a clean surface into a long rectangle sheet. You want it to be the length of the baking tray you're going to use, but remember you want some thickness to the dough. Don't make it too thin! Lay it onto a lightly greased baking tray and set your oven temp to 375F. Slice your tomatoes, yes even the little grape ones. You want them to be thin, but not paper thin. Shred your basil, if using fresh, and spinach.
Place the two different types of tomatoes, basil and spinach evenly over the surface of the dough. Drizzle the olive oil over the surface of the dough, making sure that you get a fair amount, but not too much, all over the toppings. That will help kick up their flavour when you put it in to bake. Add your all-salt after you've added the olive oil; you don't want it to get "washed away"! Once you've done this, add the red pepper flakes and pop the dough in to bake for 30 minutes. The dough will puff up and turn a delicious golden brown.
Remove from the oven and allow it to cool before cutting it with a bread knife or a pizza wheel. Pair with some fresh vegetables of choice to make a complete meal. I added some fresh cucumber slices with a spinach and raspberry salad. Red cabbage also pairs great with this. I can't wait to try other flatbread ideas out as the summer draws closer.

On another note, I can't believe that we've now started the fourth month of the year. It kind of blows my mind just how fast time is slipping away from me. It calms me down when I lay back, stare at the sky and realise that time is nothing more than a mere illusion and I am nothing more than a meme.
