Delectables with Dan: Dan & Phil Calendar Inspired Cake!
Welcome back to another Delectables with Dan!
Second this year, already. Christ time is flying by. I can't believe we're almost two weeks into the new year. Last year, I said that for each month I would do a Dan & Phil cake inspired by the colour scheme and or theme of their calendar. This month, the calendar scheme is blue and it's Phil's birth month, so we're going with a blue scheme! I will do another cake just for Phil's birthday later on this month. Let's get baking, shall we? Per usual, I have my lovely ickle assistant, Pork Chop to help me as I get down to business...to defeat the Huns...through delectables confections.

I'm starting off with a vanilla cake mix. You can use any one that you want, white, golden. Doesn't matter. You're going to prepare it like normal, egg, oil & water. Once you've mixed that up, drop in 3-5 drops of blue food colouring. I wanted the cake to have a nice rich, but preppy blue colour like the calendar and how Phil's eyes look in certain shades of light. The birthday cupcake won't be blue sadly, this is the only blue he's getting. You'll have to keep an eye out for what comes next.
And in traditional Danny fashion, we're going to take the lumps out of the batter. You want it to be smooth as 90's Rickey Martin, not looking like your first ex-wife's ass in a pair of spanks. The only time lumps are good is if they're in a bra (talking tits not tumours here.) Or maybe a one in the neck of that cocksucker who always takes your parking space at work.
Pour into a well-greased cupcake tray, I'm talking like Terry Crews on the beach in White Chicks greased up. Scoop them full of batter so that they puff up nice like chubbs side fluff when you pull them out of the oven. Bake them at 180C (350F) for 20-22 minutes. Make sure they are fully baked before you remove them from the oven. If its cold outside, let them sit outside to cool, if not pop them into the icebox to ensure they're cold before you stick your needle into them and pump them full of marshmallow goo. You'll Need:
4 liquid ounces egg whites (from about 3 large eggs)
1/2 teaspoon cream of tartar
Pinch salt
1 1/2 teaspoons pure vanilla extract
118ml cold water
170g granulated sugar

225g corn syrup
Place the water, sugar, and corn syrup in a medium saucepan. Warm over medium-high heat until the mixture reaches 240°F on a candy thermometer, typically 10 to 15 minutes. While the sugar is heating, beat the egg whites to soft peaks so they're ready at the same time as the sugar. Place the egg whites in the bowl of an electric mixer fitted with a whisk attachment. Beat on medium until the egg whites are foamy. Increase the speed to high, and add in the cream of tartar and salt. Continue to mix until soft peaks form. Once the sugar mixtures reaches 115 C (240F) carefully remove it from the heat and let rest for about 20 seconds. With the mixer running on high, slowly stream the sugar mixture into the egg whites. Continue to mix for 7 to 8 minutes, or until the outside of the mixing bowl returns to room temperature. Add in the vanilla; mix until medium-stiff peaks form. Remove from heat. Make sure that marshmallow goo is cool before putting it into icing/filling tool to pump it into the cupcake.
Yeah, I had a little bit of fun with filling the cupcakes...more fun than what's depicted in the photo. This is a delicate process and if me and a special friend weren't fooling around, we'd have less of a mess to clean up. The filling will be very liquid-like and hard to control; don't use too much! You don't want it pissing out the bottom at you.

LETS ICE!
140g butter softened
280g icing sugar
1-2 double cream or milk
1 tsp vanilla essence
1/2 tablespoon blue food colouring
And then the SMALLEST amount of black drizzle. That will help to make the icing a rich navy colour.
As shown above, add the softened butter, double cream and vanilla into a large mixing bowl. Slowly add in small amounts of the icing sugar, while whipping on medium-high speed. Once that's accomplished and you have a thicc and creamy buttercream icing, add
your food colourings and mix well, scraping down the sides of the bowl as you mix.
Take a small star tip to ice your cupcakes. Work the icing slowly and sensually around the surface of the cupcake, like a little mountain of sweetness. Top with sprinkles if desired. I found these cute little video game style hearts and I instantly loved them. I screamed so loud in the shop I think the windows rattled. (I can be a little animated when I'm excited.) And there you have it! Dan & Phil cupcakes for January! Next month it will be a little tricky with my Valentines' Day special that I'm going to be doing, but there will be a Dan & Phil calendar cake or cupcakes for February!
