Delectables with Dan Presents: Vegan & Lower in Carb Tuscan Burrito!
I've only wanted to do this blog for 3 months now...now that I finally got my shit together I can! I had one of the frozen burritos from Daiya, it was nice, but had way too many carbs for my liking. I wanted something fresh, not frozen. I've used low-carb wraps before and I really love them. There are so many different choices, there are garden greens, sundried tomato, sourdough & rye to name a few. You can check them out via the link below. For this recipe, I'm also trying a new meat substitute! I've never had Beyond Meat before, so I figured I'd give it a whirl (thank you for this phrasing Kevin McCallister) with this recipe! WHAT YOU WILL NEED
(this is a recipe for one wrap, to make more than one, simply multiply by x amount of wraps you want to make)
1 low-carb wrap, flavour of choice. For this one, I am using the garden greens one.
1/4c-1/2c beefless crumbles
1 tsp olive oil
1 tsp garlic salt
1/4 of a Roma tomato, diced OR you can use any tomato of choice.
1 small fresh ear of corn, stalked and boiled. You can use the tinned kind if you want, I don't care for it.
2-4 leaves of fresh basil
1/4c. vegan mozzarella of choice
fresh cracked black pepper (to taste, optional)

You can pair it with any sides you want, I went for a spinach and strawberry salad, with cucumber slices, olives and cauliflower chips. It works well as a lunch or dinner option. You can also brown/warm the warm if you desire, but that was one extra messy step that I didn't want to get into when I was tired and needed to get in an early night.
WHAT YOU DO
In a small frying pan, put in the olive oil and heat under medium heat. Once the pan has heated up add your beef crumbles. Cook for 10-15 minutes or until thoroughly cooked. Once it is, add your garlic salt and transfer it to the centre of the wrap. If you want to add the garlic salt while you're cooking you can do that too, it makes no difference. You're going to want to make sure that your corn is cooked before you start the beefless crumbles. Shave off some of the corn using a knife, and add it to the beefless crumbles, followed by the chopped tomato, basil and mozzarella. You may opt to melt the cheese and you can do so by warming it in the pan you cooked your crumbles in after you've rolled and sliced the wrap. I know it was supposed to have rice, but I forgot to add the brown rice. That can be an option if you want it.

It's a simple, flavourful and really nutrition packed dinner that's really easy to make. I want to make it with the other meat crumbles that I have and add the brown rice for a different sort of flavour. I've really grown to enjoy experimenting with all the different flavours of vegan products, despite them all basically being the same thing. The beeless products all have their own distinct tastes, the chicken ones, etc, even the texture changes from product to product.
Will I Stick With Beyond Meat?
While it was okay in this recipe and I did like it, I really prefer the Gardin beefless crumbles. Will I not try any other beyond meat products? No, I'd love to try other items as they become available to me! I'm always looking for new things to switch up meals and diversities my diet.
