Delectables with Dan: Pizza Waffle Dippers (with Vegan alternative)
I saw a similar recipe for these online and I wanted to make them more rich and flavourful, so I went and whipped up my own version! I go through how to make dough, to browning your meat and making your marinara for dipping! Below will be a vegan alternative since so many people enjoyed the vegan s'mores cupcakes I did earlier this week!
WHAT YOU NEED & HOW TO DO IT

1 lb fresh pizza dough
450g marinara sauce
113g shredded mozzarella cheese
113g shredded cheddar cheese
15g parmesan cheese
225g mince (ground beef)
4 Hot Italian Sausages
20 pieces of pepperoni
1-2 tablespoons olive oil
**Other ingredients for the preparation of making all ingreidents are listed in sections if not using pre-prepared ingredients from a shop.**
DOUGHBOY
You can use a packaged make at home dough or a fresh pizza dough you find in supermarkets. If you don't want to do that or have some time you can simply make the dough. When I make it from scratch I like to use the BBC GoodFood recipe with a few little tweaks.
500g plain flour, plus extra for dusting
1 tsp sea salt
½ tsp dried yeast (not fast-action)
400ml warm water
olive oil
**If making for a pizza I use garlic salt rather than sea salt; it adds another layer of flavour. You can do that with this if you desire.**
Start by adding the salt and the flour into large mixing bowl; if you don't have a hook style standing mixer, you will need to hand knead the dough on a well-floured surface. In a small separate bowl add the yeast to the water. Allow it to sit a few minutes to see if the east is active; it will bubble and little bits will rise to the surface of the water. Add the liquid to the dry. If using a mixer, put it in on medium speed and allow it to start mixing slowly. It's at this time that I like to add a drizzle of olive oil to the dough. If not using a mixer, blend by hand before putting the dough on a well-floured surface and begin working it with floured hands. You don't want it sticking to you. As it begins to form, add a bit of the olive oil to the dough. Knead for roughly 10 minutes. Do not over flour; you want it to be shiny and friendly looking. Once you've done this in a well-oiled bowl place the dough and tightly cover the top to allow the dough to rise. Place in a warm place and allow to rise for 2 hours.

When you are ready to use the dough, flour your hands and punch the dough down and work it into a flat surface. Using a round biscuit cutter, portion out the dough. You will need enough for a top and a bottom match for this recipe. (If making a large amount of these waffle dippers, then double the dough recipe.) Make sure to well-flour your biscuit cutter before cutting your dough.
MEAT ME
225g mince
225g mince
4 Italian sausages
(or if using minced sausage 225g)
1 tsp garlic salt
1 tbsp oregano
1 tbsp basil
While your dough is finishing rising you're going to need to cook your meat. We're going to be using some mince, pepperoni and hot Italian sausages for this recipe. A real taste of Italy here. Try and get the mince the least amount of fat if possible. We're not going to cook the pepperoni, so keep it to the side and focus on the sausage and mince. In the same pan, yes the same pan, add your mince and sausage. You're going to want to cut up the sausages before you put them into the pan to cook. Add the garlic salt, oregano and basil as the meat start to cook, mixing it in evenly. It will add a nice flavour to the meat as it flavours up. Allow meat to cook until well browned.
NOTHIN' A LITTLE MARINARA CAN'T FIX
1 can tomato puree
1 can tomato paste
1/2c. crushed tomatoes
2 crushed garlic pieces
2 tbsp basil
1 1/2 tsp sea salt
2 tbsp oregano
In a medium-sized saucepan over low-medium heat combine the tomato puree, tomato paste, crushed tomato. Stir well before adding the crushed garlic, basil sea salt and oregano. Mix together. The sauce should be a nice thickness and should be a nice rich, bright red when finished. You don't want it to be too thin you want it to cling to the waffle dipper when you dip one in.
WAFFLE TIME!
Heat up your waffle iron and grease it with non-stick cooking spray OR carefully brush it with a small amount of olive oil. While your waffle iron is heating up, assemble your bits. Take one of the dough rounds, add your cheeses to make a three cheese (mozzarella, cheddar & Parmesan) add a sprinkle of basil inside. Take a second rough round and firmly press it over the top of the bottom piece, sealing it shut. Repeat the process with all other dough rounds, filling some with mince, sausage and pepperoni for a meat combo, pepperoni and cheese in others for that perfect pepperoni dipper or creating a nice sausage and mince dipper! Use any variety you like! It might be a little difficult to seal the ones with the meat, so take extra caution when preparing.
