Delectables with Dan: Come Nibble on my Cannoli 🇮🇹





Today all you lovely folks get to taste a bit of my Italian.
Things are gonna get sweet and creamy up in this kitchen today, so prepare yourselves.
These cupcakes are going to be so light, fluffy and delectable they'll make Carmela Soprano jealous and wet. 


Ingredients: 
1 vanilla cake mix 
115g softened butter
225g softened cream cheese
123g whole milk ricotta cheese
375g confectioner's sugar 
1 tsp vanilla essence
1/4 tsp cinnamon
1/4 tsp kosher salt
60g of mini chocolate chips
90g  separate chocolate chips
*I didn't use the cinnamon in it and you don't have to.*
We're going to get this party started by preheating the oven to 180C.
Start by making a standard golden cake mix. You can use a boxed mix like I did here or you can make your own from scratch...I haven't done one of those in the longest time. Maybe I should, toss in some cinnamon and fresh blueberries and do like a cream cheese centre filling. Oh, shit now, I'm getting carried away here. 
Don't hand mix your batter, I mean you can, but it's kinda like when you're going down on someone. Sometimes a machine does it better. Mix on medium-high for about 30 seconds, give a stir with a rubber...scraper...then mix again on the same setting for another 30 seconds. Make sure that mixture is completely blended. (For the record I've never used an aid when going down on anyone.) 



Half fill your cupcake condoms with batter. If you need a visual aid and the photo below isn't giving you a good enough idea of how much to put in, think of your girlfriend's bra, how it's kinda always half full. But just so you know, these will be far more satisfying. Well, at least I hope so. 


Pop these suckers into bake for 20 minutes or until a deep golden colour. Meanwhile, while we're going to be getting creamy making the centre filling and topping for them. You need to make sure that your cupcakes are completely cool before attempting any body mods on them. You want them to be as cold as a menopausal wife who knows you cheated on her. That might be a little too cold. but I needed to put it into perspective and that's all that came to mind. 


You're going to cream together your confectioner's sugar, vanilla essence, butter, cream cheese and ricotta. And holy shit, don't use skim whatever you do and don't use butter subs either! It will turn into a chowder like substance. It's still delicious, but it won't work for this recipe. Now you're going to get the mixer again, yep, we're in the modern age here why not embrace it? Not always! There are some things that man does that machine can never come close in comparison...thinking about your Chubbs...Um, okay! Back to the filling....I want him to be filling me. Jesus Christ, that was like the worst possible pun, but I ran with it anyway. Let's get back to the mixing before I explode. Yep, there I go again with those double entendres...



Once your mixture is light and fluffy you are going to fold in the mini chocolate chips that you have. It should be noted that you can leave the filling as is and just top the finished cupcakes with the mini chips if you prefer.


You're supposed to scoop the top of the cupcake out with a spoon, then put your nozzle inside and fill it up with your sweet, creamy filling, but alas, I was having nozzle issues. And Chubbs, if you're reading this, I've never had a nozzle issue before. The icing bag pretty much exploded leaving me covered in cannoli filling and I didn't have time to nip to the shops and get another icing condom, so I just had to work the mixture like it was regular icing. (No, regular condoms won't work for this. And save them for the after party.) It actually worked out pretty well and no one knew that they were supposed to have some filling inside them. Using a small cake icing spatula, I worked the creamy filling around the top of the cupcake, then adding a lovely melted chocolate drizzle to the top. You don't have to add a chocolate drizzle to them if you don't want to.
