Delectables with Dan: Eggy Croissants
These mini-croissants filled with egg, cheese and mild Italian sausage will kick off any weekend brunch with a punch of flavour. Move over mimosas, there's a new brunch treat in town...okay, they're not that life-changing, but still delicious. This recipe makes four, but it can easily be doubled or tripled if need be!
You will need:
4 mini croissants
1/3 lb of ground mild Italian sausage
1/2 cup grated cheddar cheese
4 eggs scrambled
1 tsp red pepper flakes
1 tsp salt
1 tsp fresh cracked ground pepper
1 tsp dried basil leaves
**you can adjust the seasoning to your own taste.
In a large skillet over medium heat, thoroughly cook your sausage. While your sausage is cooking, take a large mixing bowl and crack 4 eggs into it. Add milk (or water depending on how you do it) a pinch of salt and or pepper and scramble the eggs. Allow them to sit for a minute before taking a medium skillet sprayed with non-stick cooking spray and placing it on the stove. Set to medium heat and allow the pan to heat before pouring the scrambled egg into cook. Heat oven to 350F and spray non-stick baking spray onto a baking tray. Slice the mini-croissants horizontally down the centre and lay them in the centre of the baking tray.
Once you've cooked the eggs and sausage, put two tablespoons of egg in the bottom of the croissant. Create a nice little nook for the sausage crumbles. Nestle the sausage into the egg, have the two make love, delicious, delicious love. Top with her friend cheese. I mean, top with shredded cheese, red pepper flakes and basil. Put into the oven to allow the cheese to melt.
Once the cheese has melted, it usually takes 5 minutes or so, remove them from the oven and plate.
Top with the fresh cracked pepper, sprinkle of salt and basil leaves. It pairs well with a screwdriver or just regular glass of orange juice. They're light, packed with flavour and can be eaten quickly if you're in a hurry or want to get something in to cure that hangover from Saturday night.
I'm thinking I might want to do more of these. Nice little breakfast things.
I know I'm kinda scatterbrained with these and the low-carb thing and everything.
I forget, I have a lot of things going on and sometimes there are times when I just don't care and
my thoughts wander away.
