Delectables with Dan: Vegan Chip Cookies!
This weekend was the perfect time for Pork Chop and I baked up some lovely vegan chocolate chip cookies and I wanted to share them with you guys! I added Valentine's Day themed sprinkle to the cookie mix so I could start getting into the holiday spirit. I'm going to be doing some baking for work to bring in so those cupcakes will be featured here. They aren't vegan since none of my co-workers are but I will try to work out a vegan version in time; if I can't, there will be another version to follow in the weeks after Valentine's Day.
To make these deliciously decadent cookies, you will need:
112g softened vegan butter, I used coconut butter
100g brown sugar
100mg stevia
60ml almond milk, you can use any other milk substitute you desire
15 ml vanilla essence
250g all-purpose flour
1 tsp baking powder
1 tsp bicarbonate of soda
2 tsp corn starch
1/2 tsp salt
175g vegan chocolate chips
Pre-Heat your oven to 180C or 350F. In a large bowl, using an electric hand mixer cream together the butter and both types of sugars. Add the almond milk and vanilla essence into the bowl and blend with the electric mixer. Add in the baking powder, cornstarch and bicarbonate of soda and mix before adding in little amounts of the flour while mixing on low speed until a dough starts to form. Mix by hand until the mix is this cookie dough. Add in the chocolate chips and mix by hand, carefully distrusting the chips throughout the dough. If you wish to add Valentine's sprinkles, add them in now and work them into the dough in the same way you did the chocolate chips, being careful to not overwork the dough.
Spray a baking tray with non-stick cooking spray before rolling the dough into small balls and placing them onto the baking sheet. There should be two rows of three on the sheet. Place into the oven and bake for 15 minutes or until cookies are golden in colour. Allow the cookies to cool slightly before removing from the sheet. They will be similar to dough balls, not really flat chocolate chip cookies. I dunno, I was in the mood to make them more blossoms than anything else. Repeat steps until all the dough is used up. Once they are cool, place in a cookie jar or other sort of air-tight container.
This dough is also great for making cookie bars! I might do some and cut them into heart shapes for Valentine's Day. You can use a cake pan to make them or spread the dough out onto a lightly floured surface and using a biscuit cutter in the shape of a heart, cut out the shapes and put them in to bake for the same amount of time at the same temperature.
